Safety takes precedence over the commercialisation of food, cosmetics and animal nutrition products.

AINIA Laboratories perform the control of foodborne pathogens, such as Listeria monocytogenes, E.coli (STEC), Salmonella spp, norovirus  or hepatitis A. Moreover, it analyses emerging pathogens such as Yersinia enterocolitica pathogenic by means of PCR in real time. The laboratories has some quick methods to indicators count such as TEMPO.

In those cases in which little time is available, microorganisms identification is done by Maldi-tof technique which give accurate results in only 5 minutes.

The exhaustive analysis of allergens is key since more cases of allergic or intolerant persons have increasingly been identified. This is the case of gluten, lactose, becta globulin, casein and egg protein.

Challenge test are carried out with the aim of ensuring food safety against a pathogenic microbial contamination or against the detriment caused by spoiling microorganisms. Antimicrobial capacity of different natural preservatives is studied in this way answering to clean label trend.
