The entrepreneur Ricardo Sguerra develops, with AINIA, the first prototypes of a vegetable snack

Ricardo Sguerra, Valencian entrepreneur in the food sector, has developed, with AINIA, the first prototypes of a vegetable snack. It involves a product similar to “potato chips”. Work has been done at the process level to achieve a product with a content as low as possible in fat, and at the same time, with excellent organoleptic qualities (colour, taste, crispiness, etc.) and with suitable stability, particularly in its texture.

Moreover, we have developed a consumer test to identify the rating of the different prototypes developed, which has helped to identify the prototype that is most highly appreciated by consumers; their general response has been very satisfactory.
