To avoid sources of contamination throughout the production process, the appropriate hygienic design of equipment and cleaning protocols is essential.

The hygienic design includes all the requirements related to construction materials, surface finishes, lack of dead zones, drainability, etc., and guarantees a barrier against contamination through equipment or installations. AINIA is an active member of the EHEDG (European Hygienic Engineering and Design Group) and representative of the Spanish Regional Section of said organization. Also, make note that AINIA is one of six organizations in the world authorized by EHEDG to evaluate and certify equipment with the criteria established by this group.

For cleaning, it is necessary to ensure that the products used are effective against microorganisms of risk, for which cleaning and disinfection protocols are defined and verified for open and closed surfaces (Clean-In-Place, CIP). These protocols are stablished taking into account the ecological factor, with the goal of reducing water consumption as well as the pollutant load of wastewater and, with it, the costs.
