Almeria’s company Biosabor has taken a step further in its approach to health, opening a line of R&D+i in Nutrition and Health V range products. The objective of this line is to provide consumers with information based on the nutritional values of their products. In this context, Biosabor, with the collaboration of AINIA experts, have validated through scientific studies the antioxidant power of its ecological gazpacho and tomato juice with pomegranate.
The results obtained from studies with the in vitro dynamic digester of AINIA’s Technology Centre show that the antioxidant capacity of Biosabor’s ecological gazpacho increased by 24% after digestion and tomato juice with pomegranate rose by 4.5%. This phenomenon is mainly due to the combination of nutrients present in the gazpacho, especially olive oil content, which stimulate the use of soluble molecules such as lycopene, very present in tomatoes and a powerful antioxidant.
